The Draft Orders API also provides the ability to create draft orders with a discount. UFE app uses Shopify draft order to apply discount for upsell offers.

Why drafts orders created in my store?
Draft orders are created when a customer initiates a checkout with upsell / cross sell offers from the UFE app widget.
You need not worry about the draft orders created by the UFE app, only focus on the Shopify admin > Orders section.
